Medium pot, medium heat, olive olive, sautee onion, and garlic – 10 minutes

Brine chicken for 30+ minutes in salt water
Heat oil in frying pain for deep fry
Dry chicken
Cut chicken in half – to thin it
Roll chicken in flour mix
Roll chicken in egg wash
Roll chicken in bread crumb/salt/parm cheese mixDeep fry breaded chicken on both sides until golden brown
Pasta Preparation
Boil water. Cook Pasta – we like thing noods
Chicken/Marinara Preparation
Cover baking 13×9 baking dish with marinara sauce
Place chicken on marinara layer
Cover breaded chicken with marinara
Sprinkle with mozzarella cheese
Sprinkle with parm cheeseBake in oven at 400 degrees until brown spots form on cheese
Marinara Sauce
- 3 tbsp. extra-virgin olive oil
- 1/2 small sweet onion, finely chopped
- 6 cloves garlic, finely chopped
- 1 (28-oz.) can crushed tomatoes
- 2 large sprigs basil
- Kosher salt
- Freshly ground black pepper
Chicken
- 1 cup panko bread crumbs
- 1 tsp garlic powder
- 2 cup finely grated Parmesan, divided
- 3/4 cup all-purpose flour
- 2 large eggs
- 6 (1/4"-thick) boneless, skinless chicken cutlets (about 1 1/2 lb. total)
- Kosher salt
- Freshly ground black pepper
- 1 cup shredded mozzarella
- 1 cup vegetable or canola oil
- Chopped fresh basil, for serving
