Chicken Parmesan

Marinara Sauce Preparation

  • Medium pot, medium heat,  olive olive, sautee onion, and garlic – 10 minutes

  • Add tomatoes, salt, pepper, basil. Medium-low heat. 30 minutes.

Chicken Preparation

  • Brine chicken for 30+ minutes in salt water

  • Heat oil in frying pain for deep fry

  • Dry chicken

  • Cut chicken in half – to thin it

  • Roll chicken in flour mix
    Roll chicken in egg wash
    Roll chicken in bread crumb/salt/parm cheese mix

  • Deep fry breaded chicken on both sides until golden brown

Pasta Preparation

  • Boil water. Cook Pasta – we like thing noods

Chicken/Marinara Preparation

  • Cover baking 13×9 baking dish with marinara sauce

  • Place chicken on marinara layer

  • Cover breaded chicken with marinara
    Sprinkle with mozzarella cheese
    Sprinkle with parm cheese

  • Bake in oven at 400 degrees until brown spots form on cheese

Marinara Sauce

  • 3 tbsp. extra-virgin olive oil
  • 1/2 small sweet onion, finely chopped
  • 6 cloves garlic, finely chopped
  • 1 (28-oz.) can crushed tomatoes
  • 2 large sprigs basil
  • Kosher salt
  • Freshly ground black pepper

Chicken

  • 1 cup panko bread crumbs
  • 1 tsp garlic powder
  • 2 cup finely grated Parmesan, divided
  • 3/4 cup all-purpose flour
  • 2 large eggs
  • 6 (1/4"-thick) boneless, skinless chicken cutlets (about 1 1/2 lb. total)
  • Kosher salt
  • Freshly ground black pepper
  • 1 cup shredded mozzarella
  • 1 cup vegetable or canola oil
  • Chopped fresh basil, for serving
