Preparation
Prepare dough: combine 3/4 cup water, yeast, 1tsp sugar and proof for 5 mins
Add 3 cup flour , 1/2 cup whole wheat flour, 1/4 cup sugar, egg, 2tbps warm butter
Kneed
Cover bowl for 30-60 minutes – double in size
Deflate, separate into 8 parts and turn into balls placing on 2 cookie sheets w/ parchment paper
Let rise for 30-60 minutes
Bake at 375 for 15-18 minutes, brushing with egg wash + seeds after 13 minutes
